Raspberry coconut milk smoothie
This smoothie happened on day one of the shiplap project. It is the perfect refreshment for a hot day, is filling enough to get you by if you don’t have time for a meal, and has the nutrition to help you recover from a hard workout (which shiplap installation turned out to be). And it tastes like unicorn rainbow babies, I am telling you.
So here’s the recipe!
In a blender, combine:
A scoop of ice
One can of full-fat coconut milk
1/4 cup of almond flour
A handful of raspberries
Blend together until smooth and enjoy!
This drink fits within the Paleo diet I follow, which is defined by not eating sugar, grains, soy, legumes or processed foods, and limiting dairy. Eating this way has simplified my life and transformed my health, and is easier than you might think (because as soon as you get past the initial cravings, the desire for those foods pretty much goes away!) I’ll write more about my Paleo lifestyle in the days to come... but until then, know that this smoothie is something anyone can enjoy and feel good about!
